INGREDIENTS

  • 1 lb ground beef
  • 6 slices diced bacon
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 banana pepper, diced
  • 2 jalapeños, finely chopped
  • 1 large onion, diced
  • 4 garlic cloves, minced
  • 1 cup diced mushrooms
  • 2 (14 oz) cans diced tomatoes
  • 1 (6 oz) can tomato paste
  • 1 (14 oz) can kidney beans, rinsed and drained
  • 1 (14 oz) can black beans, rinsed and drained
  • 2 tbsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1/2 tsp cayenne pepper (optional for extra heat)
  • Salt and pepper to taste

INSTRUCTIONS

1. Preheat the Yoder:

Set your Yoder YS 640 smoker to 250°F and add your preferred wood pellets (oak or hickory work well for a smoky chili).

2. Cook the Meat:

In a cast-iron skillet over medium heat, cook the diced bacon until crispy. Remove and set aside. Add the ground beef to the skillet and cook until browned. Drain excess fat.

3. Sauté the Vegetables:

In the same skillet, add the onion, garlic, diced peppers, jalapeños, and mushrooms. Sauté until the vegetables are tender and fragrant.

4. Combine Ingredients:

Transfer the meat, bacon, and sautéed vegetables to a large cast-iron Dutch oven or heavy-duty aluminum pan. Add the diced tomatoes, tomato paste, kidney beans, black beans, and spices. Stir until fully combined.

5. Smoke the Chili:

Place the Dutch oven or pan uncovered on the Yoder smoker. Let it smoke for 2-3 hours, stirring occasionally to ensure even cooking and smoke infusion.

6. Check and Serve:
